Chewy Chocolate Cookies


 Ingredients:
1 1/2 c all-purpose flour
3/4 c cocoa powder
1/2 tsp baking soda
1/4 + 1/8 tsp salt
1/2 c dark karo syrup
1 large egg white
1 tsp vanilla
12 T unsalted butter...room temp
1/3 c white sugar + extra to roll balls of dough
1/2 c brown sugar
4 oz choc chips of your choice

Preheat oven 375 degrees. Cookies are baked on parchment paper. Fix a small bowl with maybe 1/2 cup white sugar to roll the cookies in before they are put on the cookie sheet to bake.

These cookies are mixed in 3 different bowls....sorry for all the dishwashing required!
Bowl 1: Mix flour, cocoa powder, baking soda and salt.
Bowl 2: Mix karo syrup, egg white, vanilla.
Bowl 3 (your mixing bowl):  cream butter with the white and brown sugars.

Stir in Karo syrup mixture into mixing bowl.  Then add flour mixture and the chocolate chips.
Scrape the sides of bowl well while mixing.

Refrigerate dough for 30 minutes.  Scoop out dough and roll ( I made mine the size of a nickel). Roll ball of dough in the extra sugar and place on cookie sheet. Cookies will spread to about 2 inches in width.  Bake 10-11 minutes.  Cool on sheet 5 minutes before moving cookies to a cooling rack.
